It is the traditional version. The color is bright straw yellow enlivened by perlage. It is rich in aromas of fruit, apple, pear, with hints of citrus that fade into floral; on the palate it is soft yet dry thanks to lively acidity. Excellent as an aperitif, it is best served at 8-10°C, over legume and seafood soups, pastas with delicate meat sauces, fresh cheeses and white meats, especially poultry.

It is characterized by aromas of citrus and vegetable notes and bread crust, combined with a beautiful and lively flavor energy. It is appreciated served at 7-9° C, on even elaborate fish and vegetable appetizers, first courses with seafood and baked fish dishes or throughout a meal.

It is the version that enhances the floral fruitiness. Pale straw yellow color, delicate fruity aroma with hints of citrus, white peach and green apple, savory, fresh, smooth taste. It should be served at 7-8 °. It is the type that suits the most unusual pairings, with desserts and dry pasta or spicy foods.

The Nona Sinfonia offers several ways to enjoy it: clearest with appetizers and entrees, pouring it gently to leave the yeasts settled at the bottom of the bottle. As you proceed in serving it with the other dishes and then dessert, simply shake the bottle to enjoy it slightly cloudy: or “whole” by pouring it into an iced carafe, thus bringing the yeasts back into suspension and promoting oxygenation. It is perfect as an aperitif but goes well with appetizers, white meats, fried fish and grilled vegetables.
